Pinoy Foods @ Dampa

What is your favorite Filipino food? Is it the native food that grandma used to make or is the fusion food with a twist that your mom learned from tv. Whatever it is, Dampa in Cubao's surely has it.

Crispy Pata has always been a party favorite. It is made my boiling a whole pig's leg in salt, pepper and onion for hours and then deep frying the whole part until the skin become so irresistibly crunchy. Crispy Pata is best dipped in spiced vinegar and soy sauce with lots of onions and siling labuyo.

Pinakbet or Pakbet is a mixture of native vegetables such as eggplant, okra, kalabasa and ampalaya sauteed in shrimp paste. Every region in the country has their own version of this truly pinoy food.

Adobo is probably the most famous Pinoy food there is. Pork, chicken, squid, string beans, kang-kong and just about anything can be made into an adobo. This is usually made by bringing the meat into a slow boil in a mixture of vinegar, soy sauce, garlic, pepper and sugar. Every Pinoy loves adobo and has theiw own personal version of how to cook it.

Sinigang na Lapu-lapu will definitely make any meal setting complete. It can be an appetizer, a soup or a main entree. Sinigang is made by putting a sour-based fruit such as tamarind, kamias or green mango and bringing the main ingredient or meat into a boil.

No merry-making is complete without something grilled. And one of the favorite grilled food of Pinoys is Bangus or Milk Fish. This fish is usually stuffed with chopped onions and tomatoes before it is slowly grilled. It is then best dipped in variety of sawsawan such as a mixture of vinegar and bagoong or kalamansi and soy sauce.

Shrimp sauteed in garlic and butter has replaced the once favorite halabos. The aroma of this dish will surely make your stomach crumble.

Calamares was probably patterned after japanese tempura but done with Pinoy twist. This is one of the best known pulutan that Pinoy loves.

Baked Tahong is probably a result of creative Pinoy mind. Split the mussel, then put cheese on top, then bake it. And when the cheese melts, its definitely trouble - YUMMY.

So, what is your favorite Pinoy food?
