My City of Cabanatuan recently celebrated its 1st Longanisa Festival on February 2, 2008. Known in the country for having the best tasting Longanisa, the Local Government of Cabanatuan deemed it proper to honor the longanisa makers and at the same time promote these sumptuous meat products all over the country thru this festival.
The day was filled with dancing and cooking and different contests about longanisa such as "Best Tasting Longanisa", "Longest Longanisa", and "Fastest Longanisa Maker" among others.
The event was participated by more than a couple of dozen longanisa makers in the City. They market and offer their products to the public with free tastes and samples to the festival goers.
Among the longanisa featured in the festival were Recado, Hamonado and Batutay. For those who are not familiar with these types of longaniza, here are brief description of each. Recado Longanisas are ground pork mixed with lots of garlic and pepper. Hamonado Longanisas are pork mixed with sugar. Batutay Longanizas on the other hand are ground beef mixed with sugar.
The best way to cook longanisa is to let them simmer until all the waters evaporated. Then gently fork these sausages until oil come out. Just let it cooked from its own oil under low heat until the longanisa turn into golden brown. Expect an appetite-building aroma while these longanisa are cooked.
Although, longanisa are typically fried, some booths demostrated various recipes using longanisa products. Some of these includes shomai, pika-pika and longanisa salad.
Since this was the first time that a festival of this nature was held in the City, the organizers of this event has learned a lot and will continue to improve this event in the coming years. They now have plans of putting up dress-like-a-longanisa and even a motorcade/parade with floats resembling that of a longanisa. Now, that is a sight to see.
So, to anyone who happens to pass by my City, do not forget to take-home the best longanisa of the Philippines. Or better yet, give me a call so I can bring you some. Yummy!!!

i dont like too big longanisa. I love the skinless one in which when i was a kid i mistakenly called it as stainless longanisa.

Glad I called here you have some fine stuff on show, seems like something for everyone. This post as sorted out my evening meal.. I just need to nip out now and buy some sausage.
The pictures you commented on are took on the edge of two market towns thats Hyde and Glossop, mixed farming, industry, housing. Luckyerly in is quite a green place and is surrounded on three sides by moorland and hills.

ReplyDeleteMan, I love longanisa, the Bacolod variety I grew up to love:)Yes, I heard a lot about the famous Cabanatuan loganisa and would love to try it. Nothing beats a a freshly made longanisa better than the frozen ones we get here.
